I fail the see the problem with this plan.

Fwiw, I put whatever appropriate herbs I have to hand in my gravy as well.
It's a winter food dish, so things like coriander would probably be
inappropriate, however.

But yes, the important thing is the gravy is very tasty with bacon and
sausage.
