I think in general, depending on how long the box has been around and
how much clutter it's accumulated, it's probably easiest to back up
your files and reinstall. Non-gnome flavours of Ubuntu can be found
around the web:

http://www.kubuntu.org/ (KDE)
http://www.xubuntu.org/ (xfce4)
http://www.ubuntu.com/products/whatIsubuntu/serveredition (no Xorg
installed by default)

Disclaimer: I've not tried any of those except the server edition,
which I then installed Gnome onto.

The "correct" way to do it is to uninstall the "ubuntu-dekstop"
package and install the "kubuntu-desktop"/"xubuntu-desktop" etc.
packages, however my apt-fu isn't strong enough to actually trust that
that will do what you mean.
