I've always used abcde (A Better CD Encoder -
http://lly.org/~rcw/abcde/page/) on Linux. You can probably get it to
install on Mac OS X, either through Fink (http://www.finkproject.org/)
or just compiling from source.

Example usage:

~$ abcde -o mp3:"-b 192" -d /dev/cdrom
