Yeah, what he said. If there's no crispiness then it's a waste of bacon. 
The best bacon has both of course, preferably cooked with lots of little 
calcified bits from other bits of bacon that stick to the new bacon and 
give it a lovely rounded flavour.

Good grief I'm hungry for bacon now...
