Xubuntu is based upon XFCE. A lot of the gnomish apps will still be
there, you're just changing your window manager and assorted
applications (dock, etc.)

Fluxbuntu ought to be sufficiently different for you.

You should be able to use fluxbox across multiple monitors, it's just
a driver setting and that needs no given GUI.
