I do risotto in a large (2l?) glass casserole in the m/wave. The base
for 4 is:
2tblsp olive oil
250g arborio rice
1 large onion chopped
2-4 cloves garlic chopped
700ml stock
- add oil, rice, onion,
- give 4 min
- add stock, ingredients that need cooking
- give 4 min
- stir
- repeat 4 min and stir until ready (usually 4x4min total for me)
- add incredients that don't need cooking (parmesan, cream, spinach,
wine, ...)
- add topping (parmesan, basic, ...) and serve from the casserole
Benefits:
- only one pot to wash
- you can get other things done in all those 4 minuteses
